How to Make Milk Chocolate Wine
As you know, I like to make interesting wines. I’ve seen some posts on Instagram for adding chocolate to red wine to make a milk chocolate wine drink. But, that’s not really chocolate wine.

There are a couple of recipes on the forums for chocolate wine and the comments usually associated with them say that they are slightly bitter but very fruity in flavour.
Now, I’m not too keen on dark chocolate, so I thought I would come up with a recipe for milk chocolate wine. And this is it. Milk chocolate wine!
The recipe is pretty easy I’ve also added some orange into my wine because I like chocolate oranges. But I know that’s not to everyone’s taste so if you don’t like orange chocolate then reduce the orange to a half or even drop it out altogether.
The wine Has a nice chocolate aroma with a hint of orange and the vanilla with the lactose really turns this into milk chocolate. Smooth, silky, slightly sweet, this is a rich decadent wine that takes a few months to mature.
Drink it slightly chilled, but not too cold, just like you would a red wine and then you will get all the rich chocolate aromas.
So in our video we show you how easy it is to make milk chocolate wine. It takes about six weeks from starting to bottling but it’s worth it. And with only an aging of about 3 to 6 months in the bottle this is a very quick wine to enjoy.
The method is slightly different than most other wines, but if you’ve seen our apple and blackcurrant crumble or our rhubarb and custard wine recipes and this is not that dissimilar.

      Hi. The finished wine will work out around 11.5%. If you want it stronger, say 13%, just add an extra 115g of sugar at the beginning.

    Yum! Definitely have to try this. I think I still have one small demijohn free. The others are filled mostly with various meads - I'm in my mead phase, and elderflower wine. Lactose is non fermentable, right?

      Cool. Yeah, lactose is non fermentable. Its about 5times less sweet than the same amount of sugar, so you need quite a bit, but its the creamyness we want in this kit to make it into a milk chocolate.

    Question. Do you have to add the lactose in this wine, Or can you leave it without and just have the wine as it is?? Or will it just ruin the entire chocolate part of this wine? It looks so amazing in that orange colour!!!

      He mentions right at the beginning that chocolate wine is made with dark chocolate 00:18 , he's using lactose to turn a dark chocolate wine recipe into a milk chocoolate wine. You can leave it out but you will probably need to add an unfermentable sugar like Sodium Saccharin to sweeten to take some of the bitter edge off before you bottle it (just add to taste).

      I couldnt have said it better! Lactose adds a gentle sweetness but also adds a creamyness to the wine. It takes the bitter edge off so it can be drank quite young. Dark chocolate wines need to be left at least 12 months in the bottle and then i still find even using “dutched” cocoa powder, its still bitter.

      @@Brewbitz I have an allotment and my neighbour has an apple tree that grows huge apples. Don't know what variety they are. He does not like apples and let's me have them. They make the most amazing tasting cider (& pies & Apple Sauce, Jam) i have ever made. Really tasty they are. Looking forward to making another 50 litres of it again this autumn

    Would love you to do a review of the finished drink . Iv made 3 cider kits , a mangrove jack and a john bull and found thrm very thin with no body, just waiting to try the bulldog kit i did last month . I normally make real apple cider but we had no apples last year so had to cheat with some kits😂😂

      Hi. I will! Cider kits can be a bit thin. So try reducing the quantity, or try making the 2 can kits and no added sugar. Also if you compare them to commercial cider that has been back sweetened with sugar, they will feel thinner as the sugar they add ads a thickness to the finished cider. Commercial cider makers add the co2 at the point of bottling and usually pasteurise the cider so there is nothing to eat the sugar they add. Not easy to do for a homebrewer.

    been brewing for 25 years plus and father was a brewer these kits are ideal for standard novice. cider should only be done the real way crush press ferment get drunk lol .good video though somerset and cornish cider is the only true cider

      These kits are great if you dont have apples or the scratter or the press to get the apple juice. Or apples are out of season. They are a great base for experiments too.

    If I’m to make larger quantities of wine, would I just need to add the same amount of sugar to blackberry ratio and add only 1 tablets of yeast? Or would I need to double up on the chemical enhancers? Like 2 tsps instead of 1. Thanks

      Hi. Simply increase everything in proportion. So if 2 gallons, use twice the quantity. If you are using a sachet of yeast, they are usually good for up to 23litres.

      Hi thanks for that. Will share my results. Just another question. Does the suger dissolve well in the cold juice or would it be be better warm..you know like school exoeriments? Doesnt a warm luquid disolve a solid more efficiently?

      @vaughangrey3809 indeed warm water makes it easier to dissolve sugar, the water wont be that cold when you come to add your sugar, so it will dissolve quite quickly.

    hi davin i have just purchased the auto bottle filler my concern is would the splashing not cause oxidisation in the beer or lager ect thanks for the video

      The design means that the liquid goes down the inside of the bottle to reduce splashing. If you want to prevent oxidisation, you could flush the bottles with CO2 or Nitrogen just before filling.

      Hogweed is actually edible. However, there is a plant that looks very similar that is deadly - Hemlock. Its hard to tell them apart, so i would even leave hogweed alone. And leave giant hogweed well alone too.

    Can you use cooking yeast in sachets instead of champagne yeast? I don't have champagne yeast where I am.. 😢

      Ideally you need to use a yeast for the job you are doing. If you cant get champagne yeast, an all purpose white wine yeast will do, a cider yeast works well. Bread yeast as a last resort will do it, but the finished champagne may taste bready

    I’m going to give the boiling water method a go for my shrink caps next batch. I’ve been using the kettle and just switching it back on when it goes off. Annoyingly, I had to rip off a shrink wrap that I did today as I discovered that the cork was leaking!

    I’ve never used the 3 handled corker but instead use a twin handled corker. Tried the Ferrari version today and it was so easy with a cork I briefly rinsed.

    Thanks. I'm guessing there isn't an air tight seal because I can see little bubbles fizzing. Initially I thought the yeast was bad but that doesn't seem to be the case. I have the same fermenter as this video. I'll inspect the rim again though.

    I bought a Young's fermentation vessel. My airlock isn't bubbling but when I lift the lid I can see little bubbles like it's fizzing.

      Hi. Take a look at our blog which has some answers that might help. Especially #3 - If you think your airlock should be bubbling away but it’s not, then there are a couple of things to check. 3a - Do you have an airtight seal 3b - Has it finished fermenting? See point 1. 3c - You may have too much water in your airlock. This can cause pressure to build up and the cause the gas to escape from somewhere easier. 3d - tiny dents on your bucket rim may allow gas to escape rather then through the airlock. We have also made a video which should help too - ua-cam.com/video/1HiSmz4VKQ0/v-deo.htmlsi=57ZrGGxZOvio1p3b For what you have said, it seems you dont have an airtight seal and so the gas is taking an easier escape route
